Father’s Day is in a few days and most of us will be looking around for recipes for the poolside lunch table. Easy Breezy Cleaning Co would like to share with you a couple of its most prized lunch recipes.


Easy Summer Salad 





1 14 oz can black beans, drained ( rinse if desired)
1 roma or medium tomato, diced
1/2 cup diced red onion 
1 cup of frozen corn
1 small carrot diced
1 cup diced semi-ripe mango ( or use green apple instead)
1 seeded jalapeno, diced ( optional)
1 cup diced cucumber
1 handful chopped cilantro or parsley 
Dash of salt and a grind of pepper
Juice of 1 lime

Other ideas:  Use this on a bed of mixed green for a hearty salad.
Or use it as a filling in a lettuce or tortilla wrap.


Jalapeno Cheddar Beer Bread





3 cups all-purpose flour
1 tablespoon baking powder
1 teaspoon salt
3 tablespoons sugar
1/4 teaspoon cayenne pepper, optional
1 cup shredded Cheddar cheese, divided
1 (12-ounce) bottle good quality beer or ale
1/2 cup butter, melted
1 jalapeno pepper, thinly sliced

Preheat oven to 350 degrees. Grease a 9X5-inch loaf pan.
In a medium bowl, mix together flour, baking powder, salt, sugar, and cayenne pepper.
Add 3/4 cup Cheddar cheese and beer and stir just until incorporated.
Pour half the melted butter into the prepared pan. Add batter. Pour remaining butter on top of batter.
Sprinkle remaining cheese on top and scatter jalapeno slices on top of the cheese.
Bake 50 to 60 minutes, until golden brown on top.
Serve warm.







This is a popular drink in Brazil. Absolutely delicious and refreshing on a hot summer day. Some may relate it to a mojito but the absence of mint and the presence of cachaca makes it different.

1 oz cachaca ( or any dark rum)
1 lime, cut into wedges
2 heaping tsp sugar

In an old fashioned whiskey glass, muddle limes wedges and sugar together till it’s juicy. Add lime and pour cachaca over it for a great cocktail. If you are unable to find cachaca, you may use a dark rum or Capt Morgan.
